Microgreens
What Are Microgreens?
Microgreens are young vegetable or herb greens that have a concentrated nutrient content. They are not sprouts but are in-between the sprout stage and the baby green stage when they are harvested. In addition to the dense nutritional value of sprouts, microgreens have an extra boost of chlorophyll. Chlorophyll can be called “nature’s greatest healer” due to its amazing healing properties. Not only do microgreens have a remarkably high nutrient density they also add wonderful flavor, texture, and visual interest to any dish they are incorporated into. Added to our daily diets, microgreens are a wonderful way to boost the nutrition and beauty of our food. It is also an effortless way to get some extra nutrients into our growing children and teens. Our kids have grown to love microgreens and ask for them to be added to many of the things they eat. Win-win!
Studies have proven that microgreens contain from 4 to 40 times more vitamins, enzymes, minerals, antioxidants, and beneficial properties than their equivalent grown to maturity. https://agnr.umd.edu/news/mighty-microgreens
Microgreens provide nutrients that are important for the health of our eyes, skin, bones, healthy digestion, preventing cardiovascular disease, fighting cancer, reducing inflammation, and strengthening the immune system among many other things.
